What “mala” actually means

Sichuan food is not one wall of heat. It is a balance of chili, numbing peppercorn, fermented flavors, sweetness, salt and fat. Mala (麻辣) is the combination of drying chilies and Sichuan peppercorn: heat plus a citrusy, buzzing numbness. Once you can taste the difference, the cuisine becomes much more than a test of endurance.

Ask for 微辣 (wēi là, mildly spicy) if you are unsure. It is a real request, not an apology. If you want no chili at all, say 不辣 (bù là). Many stir-fries can be adjusted; hotpot is harder, which is why a divided pot is your friend. “Medium” in a tourist restaurant can still be fierce.

The dishes worth learning

Start with mapo tofu: soft tofu, minced beef or pork, fermented broad bean paste, chili oil and ground peppercorn. Then dan dan noodles: a small bowl of sesame, chili, preserved vegetables and minced meat; mix before eating. Kung pao chicken brings sweetness and crunch, dry-fried green beans bring contrast, and a plate of cucumber with garlic cools everything down.

For a group, book a hotpot. Order a divided pot, then a mix of beef, tripe, quail eggs, tofu skin, potato, lotus root and leafy greens. The sesame-oil-and-garlic dip is there to cool and enrich, not to add heat. Cook in small batches, keep raw and cooked chopsticks separate, and give each ingredient its own moment.

  • 微辣 — mildly spicy
  • 不辣 — not spicy
  • 一碗米饭 — a bowl of rice
  • 不要香菜 — no cilantro
  • 买单 — the bill, please

“The best trips here are not built from a checklist. They come from a long lunch, a wrong turn, a guide who knows which gate to use.”

Breakfast, snacks and tea

Chengdu breakfast is simple and excellent: baozi, soy milk, youtiao, congee, a bowl of noodles. For a snack, try chuanchuan — skewers cooked in a shared pot and charged by the stick. Leshan is famous for sweet-skinned duck, bobo chicken and tofu nao; eat them in the old town rather than at a station.

Tea is the other half of the food culture. Order a covered bowl at a park tea house, and refills are usually included. Jasmine is the classic; local green teas are lighter and more vegetal. Sit for two hours. No one will hurry you, and the pace is the point.

If you are vegetarian, or worried

Vegetarian food exists, but it is not always obvious. Temple restaurants are reliable, and many cities have dedicated vegetarian cafés. Say 我吃素 (wǒ chī sù), then specify 不要肉 (no meat), 不要猪油 (no lard) and 不要鱼露 (no fish sauce). In hotpot, ask for a mushroom or tomato broth and a separate pot of vegetables.

Go easy on the hotpot broth, which is very rich, and drink more water than you think you need. If your stomach is sensitive, start mild and avoid raw garlic and unidentified wild mushrooms. Sichuan is generous, but it is not a competition. Order one mild and one full-flavored dish at every meal; the contrast is where the cooking makes sense.

Take this with you

Learn three phrases — 微辣, 不辣 and 不要香菜 — and always order one mild dish alongside the hot one.
